Pumpkin Pancakes recipe

These would be great for a Halloween or Thanksgiving brunch.  Or just for regular breakfasts.  Something different and full of autumn taste and color.  Pecans on top.  You could also add whipped cream.  Yum....

 PUMPKIN PANCAKE RECIPE

Ingredients
  • 2 cups flour
  • 3 tbsp brown sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tbsp pumpkin pie spice
  • 1/2 tsp salt
  • 1 1/2 cups milk
  • 1 cup pumpkin puree
  • 1 egg
  • 2 tbsp vegetable oil
  • 2 tbsp vinegar
Directions
  • In a bowl, mix together the milk, pumpkin, egg, oil and vinegar.
  • In a separate bowl, combine the flour, brown sugar, baking powder, spice and salt.
  • Combine dry and wet ingredients just enough to combine.
  • Heat a lightly oiled griddle or frying pan over medium heat. Pour 1/4 cup batter onto the griddle for each pancake.
  • Brown on both sides. Serve hot with whipped cream and pecans.
