Amish Potato Salad
Amish potato salad is distinct for its sweet and sour flavor that comes from vinegar and sugar. Much sweeter than regular potato salad, but you can adjust the sweetness.
Ingredients
1 lb potatoes; peeled, boiled and cubed
2 hard boiled eggs
¼ cup sour cream
1 tablespoon yellow mustard
¼ cup mayonnaise
¼ cup sugar (or to taste)
1 teaspoon vinegar
salt and ground black pepper, to taste
Instructions
Place potatoes and chopped hard boiled egg whites in a large bowl.
In a small bowl, combine mayonnaise, hard boiled eggs yolks, sour cream, mustard, sugar, vinegar, salt and pepper. Mix well. Pour over potatoes and and gently stir until thoroughly coated. Optional: sprinkle with paprika for color. Refrigerate until cooled, at least 30 minutes, before serving.
